“Yama-uni” is the traditional seasoning of Kawada, which is made by rubbing together completely in Yuzu, red namba (full ripe shishito), red peppers and salt. It is called ” Yama-uni” because it looks like sea urchin.
This fresh yuzu flavor and spicy taste is very delicious.
It is taste that we want many people to know!

2. Explain about the Yama-uni
3. Experience making Yama-uni
4. Taste a bowl of hot udon with Yama-uni!
※ Udon is an extra charge.

★ About making Yama-uni
Ingredients: Yuzu, red namba (full ripe shishito), salt, red peppers
1. Rub each of the previously prepared ingredients separately in a mortar.
2. Put all ingredients in the same mortar and rub together.
3. Rubbing completely for about 30 minutes until the luster comes out, and it becomes smooth!
※ You can take home 50 – 60g per person.

Homemade yama-uni is delicious!
I’ve never tasted yama-uni before but once I tried it, I am totally hooked to its unique taste!
Although the making process was really challenging, the end result was worth it!
